Yield: 4 servings
Ingredients:
1 cup fresh blueberries
Zest and juice of 2 lemons
1 cup heavy whipping cream
1/4 cup sugar (adjust to taste)
1/2 teaspoon pure vanilla extract
4 graham crackers, crushed
A pinch of salt
Instructions:
Blueberry Compote: In a small saucepan, combine the blueberries, half of the lemon zest, 2 tablespoons of lemon juice, and 2 tablespoons of sugar. Cook over medium heat until the blueberries start to break down and the mixture becomes syrupy (about 5-7 minutes). Allow the compote to cool.
Lemon-Infused Whipped Cream: In a medium-sized mixing bowl, combine the heavy whipping cream, remaining lemon zest, 1 tablespoon of lemon juice, remaining sugar, vanilla extract, and a pinch of salt. Whip until soft peaks form.
Layering: Take four serving glasses or bowls. Start with a layer of crushed graham crackers at the bottom of each glass. Add a layer of the lemon-infused whipped cream followed by a layer of the blueberry compote. Repeat the layering process once more.
Finish with a sprinkle of crushed graham crackers and a few fresh blueberries on top.
Chill in the refrigerator for at least an hour before serving.
Serving Suggestion: Serve with a slice of lemon on the side for an added zesty kick!
Note: Adjust the sugar as per your taste. For a healthier version, consider using alternative sweeteners or reducing the sugar content.
